I used to use peanut oil and still do on occasion if I'm doing a stir fry. It has a really high smoke point and for stir fry, you want a really high heat.
I use 1% milk now. Skim tastes like water and now 2% tastes too fatty for me.
I just had lunch, one that I consider very healthy. I put some romaine greens down and drizzled them with my homemade vinaigrette dressing. I make dressings usually out of EVOO (extra virgin olive oil) and either balsamic vinegar or lemon plus garlic and herbs. It is num num.
Then I put a hard boiled egg on it, some black seedless grapes, a half a raw carrot and some mixed nuts (I mixed them because commercial mixes have salt on them--yecch!) comprised of almond slices, pecan halves and English walnuts. Very satisfying and heavy on the protein which is the mix my body seems to prefer.
