What is "healthy" eating? (originally from Comestible Zone)

A lot of the time, the definition of "healthy" is linked to a specific medical condition we want to address. I eat "heart healthy" to minimize cholesterol and bad fats to avoid clogging my arteries, and minimize sodium to keep my bloodpressure down.

Then there's the need to manage sugars and carbohydrates to control diabetes. And the need to manage calories to control weight, though surely the others are more direct...calories are just energy, in themselves. It's where they come from that matters.

Then I think about the average American diet, which is composed from the essential food groups found in the industrial world: fat, sugar, salt, carbohydrates, and starch, primarily. Plus preservatives of all kinds.

So wouldn't it be smart to define really healthy eating as the superset of eating heart healthy and diabetes healthy?

Not to mention keeping kosher just to be on the safe side.
