Tom, I like your idea. I've always thought it would be interesting to see what else goes on in the Star Trek universe beyond the Enterprise. I would even have the stories cover the different time periods from the time of "Enterprise", TOS to well beyond STNG, DS9, and Voyager. The last 3 were all in the same time period, so why not story 100 or 200 years beyond that.
