I'm glad someone else besides me thinks that's the best part of the Galactica remake. It's the first time I can think of when dogfights in space aren't played out like they are in atmosphere.
The exile fleet still flies in formation with a common "up" axis even though one has to assume artificial gravity inside each ship... but when the Cylons attack and the Vipers come out to meet them, they all use every degree of freedom.
