how about Offshore Windmill Desalinization Plants!

Each Windmill can make a megawatt or so of power which could be used to power a nearby desalinization plant!

Instead of piping the power back to the mainland, you pipe the water.

Hey, maybe each windmill could house a small desalinization plant in it's tower!
