Because it is the right of the Spouse to make care decisions, including end of life decisions.

I understand your point- now that it has been clearly made.

The kernel of it is: "If she is dead, it harms nobody to keep her as-is, and makes the parents happy, so why not continue?"

If I were Mr. Schiavo, I think this is the decision that I would have made, years ago. If she is, as you say, flank-steak, then no harm no foul. Sign the rights over to the parents and move on...

But I'm not Mr. Schiavo. And it is his right to act the way he is acting. Nobody should be able to inject themselves into his decision. it is his decision

Beyond that, the deeper issue is about the rights of spouses to make care-giver decisions for their partners (end-of-life decisions are an unfortunate facet of that). Given both our respective situations in life, surely you see the importance of that, correct? (I'm pretty sure thats not out of line based on our prior discussions here, but let me know if it is and I'll retract).
