re: "not obligated to keep the Law of Moses"

Well like I said, mormons believe the catholic church lost its 'mandate from heaven' or priesthood (as we call it) after the apostles were all killed. So anything that happened from that point on, we don't claim as our own, though our ancestors certainly belonged to the catholic church.

As for 'not obligated to keep the Law of Moses' Jesus taught that the Law was fulfilled in him and he would no longer require sacrifice of blood, but instead required a broken heart and contrite spirit as the only sacrifice. That text is lifted directly from the Book of Mormon. I just checked to see if there is a biblical equivalent to that verse and found one in Psalm 51.

The way we see it, the Mosaic law (and even the sacrifices required before Moses dating back to Adam) had one purpose, which was to symbolize the One Great Sacrifice which was to come as Christ's crucifiction. The Old Testament is full of symbolism which supports it, such as Moses lifting the Brazen Serpent and the children of Israel only need to look at it and be healed. Isaiah is full of references to Christ, as is the tradition of sacrificing a lamb without blemish without breaking its bones.
