The cholesterol in eggs won't hurt you. Eggs are also high in lecithin which is a fat emulsifier breaking down fats and helping them to not stick to your arteries.
You bet LDL plays into heart health, big time. One needs to keep their HDL high (glass of wine a day, exercise, monounsaturated fats all raise HDL) and lower LDL. Stay away from saturated fats. Satfats should be very very little in your diet. A steak once every 6 months isn't going to kill you but beef every day just might. Buffalo is very lean and makes a good substitute for beef.
If you keep your meats to small servings, it will benefit you greatly.
The problem with modern society is that we process the hell out of our foods and remove the good parts while keeping the bad parts. Sugar cane has high amounts of chromium in it which assists the body in efficiently taking care of sugar eaten. So, of course, they process it and remove all the nutrients and only keep the sugar that raises your glucose levels. Chromium makes the cell more sensitive to insulin so that it can take care of the sugar.
Wheat has all kinds of good stuff in it but what do they do? Refine it until all the good stuff is gone and what remains is white flour that raises your glucose.
No wonder we have childhood obesity and adult obesity and diabetes is rampant. Until we make changes and demand manufacturers stop processing the crap out of everything, it's going to get worse.
