The course in Greek I managed to find as an undergraduate only got enough registrants to stay available because it was crosslisted under Classics and Religious Studies. It put me in contact with Hebrew scholars. They had very interesting Bibles, marked up in multiple colors to indicate the theoretical source material for each passage. Some verses had more than one color.
The Bible has been in one language since the Vulgate. The Apocrypha left the accepted texts earlier, at Nicea, by decree of Emperor Constantine the Great. The KJV translators went back to what original documents were available at the time to do a translation uncontaminted by the Popish idolators. But I think you know that too.
I think you will find that the New International Version is actually more favored by more militant fundamentalists.
The modern translation by the scholars at Oxford University includes exhaustive notes re: original languages and contemporary culture.
