In human economics Demand is 100% human behavior. Supply is created by resources and people acting in their self interest, demand by what people want. Prices and quantities are determined by the interaction of those things.
As I mentioned before the natural world is also governed by S&D and your response indicated you understood that point. I would also argue that anything that requires energy, even an inanimate object like a star, is governed by S&D. A lifeless object like a rock might not be governed by S&D, although one could argue a sedimentary rock exists because of a supply of water and time, a diamond by a supply of pressure and time. An asteroid requires a supply of gravity for its motion.
Whatever.
To your point, yes many capitalist over history have used economic theory as an excuse for exploitation. The "invisible hand" was to many the hand of god and altering it in any way was to create inefficiency (blasphemy!). This is an outdated mindset but yes there are still many adherents to it.
You might be surprised that business ethics is a required topic in business schools. It covers subjects such as personal and corporate responsibility, the importance of trust in business relationships, social and environmental responsibility and other things. Business school faculties are not filled with Satan's legions. Most are decent people who are not looking for an excuse to grind some poor bastard under their heel. Of course there are bad eggs and assholes, but from my personal experience there are mostly decent people and even a few democrats!
