Goods do not naturally flow to demand.

Are you familiar with the "food desert" concept? There's demand but no profit to be made.

And I never mentioned government intervention.

In mining, "ore" has a specific meaning. Can you make a profit mining it? Period. There may be lots of demand, but if it costs more to mine, refine, and transport than you can profit, well, it stays in the ground.

There are lots of communities that would love a big super market full of a variety of goods. That's demand. But the seller would never profit due to the low volume.

I desire fresh local strawberries in December. Is my demand going to supply them? Nope.
