Books:
If we are talking capitalism and the rights of the individual:
Pretty much anything by Ayn Rand. Many articles show the linkage between the radical Left and the modern environmental movement. F. A. Hayeks "Road to Serfdom" and "The Fatal Conceit." Milton Friedman's "Free to Choose," and "Capitalism and Freedom." Henry Hazlitt's "Economics in One Lesson."
As far as specifically showing that capitalism is better for the environment than socialism, aside from the evidence of history, I couldn't locate a specific book on my shelf on that subject. There are articles and lectures...a lot of them included in the above books.
I also recommend checking this site out. Makes a remarkable parallel between nature and capitalism.
I don't agree that capitalism is the only economy possible in an environment of individual liberty. See Ursula LeGuin's The Dispossessed for discussion of an alternative resembling Israeli kibbutzim, and Robinson's Mars trilogy for other interesting concepts.
These are science fiction books. In real life, centralized control of an economy cannot be accomplished without nearly total control of the citizenry.
In any case, the right to economically deal with who I want on whatever terms we agree on is an essential part of individual liberty.
